Kali is a very specialized tool, unsuitable for normal use, which has inexplicably gotten popular amongst Linux beginners.
Overall, Kali Linux is a cybersecurity-focused distribution, where your desktop runs as the root user (the highest privileged user on Linux), making it very dangerous and (ironically) vulnerable against malicious software.
Arch requires manual installation, but by default, the install you end up with by following the documentation or tutorials is a lot closer to "normal" Linux desktop distributions.
Overall, if you need to ask the question Should I use Kali Linux? then the answer is, most likely, no.
