At the moment of the decision, my desktop was the primary place I did work. Due to this, I can't have it blow up on me while I work. While Arch is interesting and powerful, Ubuntu offers (at least for me) a lot more stability and lets me focus on other things than maintaining my own OS installation.

Ubuntu is really great, i have it running on an hp with 2gig ram. Unlike windows, ubuntu self maintains itself , crashes i solved sooner. Ive had linux for four years now and its still kicking on the other hand my windows computer with all the great specs has crashed a couple of times. Ununtu is a smarter safer choice

I would pick nginx over both IIS and Apace HTTP Server any day. Combine it with docker, and as you grow maybe even traefik, and you'll have a really flexible solution for serving http content where you can take sites and projects up and down without effort, easily move it between systems and dont have to handle any dependencies on your actual local machine.
