That's a great project ! I would recommend 2 options for the backend :

1. Symfony with API Platform bundle

2. Doing something with Firebase

Project-1 : If the Laravel part is an API, you should check Flutter or Quasar Framework for your frontend in order to reduce the development time and process.

I would go Symfony with API Platform bundle. It's super powerful, the security part is awesome and the documentation is great. At Alpsify, we are currently using Symfony for ours APIs and VueJS / Flutter for frontends when developing custom stuff.

Am I the only one to think that libraries like Bootstrap, Vuetify, Materialize, Foundation are too much sometimes ?

Most of the time you are loading all the library and using 10% of it. And on that 10% you are modifying 90% of it.

I feel like using grid and pure CSS / JS are enough and cleaner.
